Good evening, friends! I hope everyone is having a nice week so far. We’re almost halfway through! Over the weekend I performed another Pinterest Experiment that I’d like to share with you… Skinny Velvet Cupcakes.
I originally attempted these when I came across this recipe, on Pinterest a few weeks ago, and thought they looked very interesting (and pretty — purple is one of my favorite colors, after all). However, they turned out so-so. Don’t get me wrong, they looked delicious, and the icing is awesome, and I really, really REALLY wanted to love them, I did, but taste wise, the cupcake part definitely lacked something sweet. I’m sure that’s part of what makes them “skinny”, but I personally need at least a little sweetness in there. If you are okay with not so sweet cupcakes, then these are definitely for you! I, on the other hand, have such a sweet tooth. Anyway, I did little searching on Pinterest and Google to see if there was anything similar that could help give these little pretties a sweet boost, and came across a similar recipe here.
Hello, friends! I hope you all had a fun and relaxing weekend! Mine was pretty nice… I went out to lunch with a friend, did some baking, did some relaxing, and now I am going to tell you about some of my baking adventures.
The first recipe from Pinterest that I experimented with this weekend kind of flopped on me. Now, I say “kind of” because I truly believe that this recipe needs just a little tweaking. Also because others may like the way this recipe turned out, but I personally need more sweetness. So, I will attempt this one again, play around with it a little, and report back my findings.
In the meantime, here is a recipe I experimented with and really enjoyed the results!

For my first Pinterest Experiment post, I wanted to share the recipe I came across for a Chicken Tamale Casserole. Now, I am not sure if I actually found this recipe via Pinterest, or if I found it just browsing around online and then pinned it to my Pinterest boards that way, but either way, it’s on there now. Also, I’d like to get out of the way that I did not take the corresponding picture. It’s from the website where I got this recipe. I did take a few pictures after I made this, but only to send to a friend, so they’re not that great and therefore did not make the cut.
So, now that I got that out of the way, let’s get started. I’m going to be upfront and honest about this recipe… it is absolutely amazing! I love, love, love it, and I’m sure you will, too. It’s just so delicious! Let’s put it this way… Although I will eat them, I am not exactly a fan of leftovers. With this recipe, I was looking forward to eating it for lunch and dinner the days following. It was that good! The best part about this casserole (besides how awesome it tastes) is how easy it is to make. It doesn’t take long to do so , either! I’d say the most time-consuming part is the shredding of the chicken breasts. Not bad at all!
I know, I know... it's not even Memorial Day, yet! One holiday at a time, please! I get it, I hear you. However, when it comes to the gift giving holidays, I like to be ahead of the game, that way, I'm not running around, scrambling at the last minute for a gift. That being the case, I've started thinking of Father's Day gift ideas now, because it will sneak up on us before we know it.
